Pastor Glen cooks Cajun Fried Catfish

In this episode, Pastor Glen will show us how to make Cajun Fried Catfish!

Fresh catfish – 3 – 4 filets per person
(whatever kind you like)

Oil to fry (avocado, grapeseed, peanut, or coconut – do

not use olive oil for frying) (enough oil for 3 inches in the skillet)

Cajun fish fry – 10 oz. pkg. (this is a cornmeal based breading)

1 egg

2-3 cups milk (enough to cover fish in a shallow baking dish to soak)

Yellow mustard – squeeze bottle

Cajun seasoning to taste

1 plastic bag

3/4 Cups milk

2 Tbsp. yellow mustard

3 Tbsp. mayonnaise

1/2 tsp. Cajun seasoning

1 tsp. Tabasco sauce

Slice fish to 1” thickness. Beat egg and mix with milk. Soak fish for 5-10 minutes in the milk mixture. Remove the fish from the mixture, squeeze and massage yellow mustard thoroughly on each side of filet, one piece at a time, covering it thoroughly. (Trust me you will not taste the mustard.)

Sprinkle both sides with Cajun seasoning and salt to taste. Put the Cajun fish fry and fish into a plastic bag. Shake until thoroughly coated. Oil should be heated to 350°-375°. (Under 350° – fish will be greasy, over 375° – fish will burn.) Cook 3-4 minutes on each side turning often. Fish will be flaky when done. If fish does not fall apart, cook a little longer.

Sauce directions:

Stir the ingredients together thoroughly. Dip fried fish in sauce. You can add more Cajun seasoning to taste, if desired.
